This recipe was discovered on a Saturday after Fajita Friday. Once again I had made enough filling to feed 20, and not wanting to waste anything we decided to put it in to a Grilled Cheese Sandwich the next day and it totally worked. What’s not to love about a Mexican sandwich?

Well, if you have an issue with lactose, then I imagine that grilled cheese sandwiches have been off the table for a while. Not any more! We are sharing all about a product called LactoJoy with you, which means that meals like this never have to be off the menu.

LactoJoy is a lactase supplement that was developed in Germany which aids the digestion of lactose. It ensures that digestive disorders usually experienced when eating lactose are either reduced to a minimum or eliminated completely.

The small tablets come in a stylish little box that is easy to store in your bag and they have a kind of neutral taste or a little bit like potato since it contains organic potato starch. If you are lactose intolerant, LactoJoy allows you to once again enjoy eating what you want and spontaneous meals with friends are not a problem.

How does it work? People who are lactose intolerant are missing the enzyme lactase. This can be provided to your body by means of lactase enzyme tablets (for example LactoJoy) shortly before consuming a dairy product. It breaks down the consumed lactose into its individual components, namely the simpler forms of sugar galactose and glucose. The usual digestive problems associated with lactose are thus reduced to a minimum or eliminated altogether.

The good thing is, you are unable to overdose on lactase. All this enzyme supplement does is to break down lactose into simpler, more easily digestible forms of sugar. Any excessive lactase enzyme will be excreted by the body. Thus, if you’re not really sure how much you need, it’s better to take a little bit too much than too little. I couldn’t imagine a life without grilled cheese sandwiches, and hopefully now they can be enjoyed by everyone! A grilled cheese sandwich is usually our go-to Saturday lunch, as it’s a great way to use up any leftovers from a Friday night. Chicken curry grilled cheese, sausage grilled cheese, tofu grilled cheese, we have made them all. But this Vegetable Fajita Grilled Cheese Sandwich has got to be our favourite leftovers grilled cheese. I have posted the recipe as if you were making it from scratch, but feel free to just throw some leftovers in there.

Ingredients

  1. 2 Bell peppers (any colour), thinly sliced

  2. 0.5 White onion, thinly sliced

  3. 0.5 Courgette, thinly sliced

  4. 4 Mushrooms, thinly sliced

  5. 0.5 tsp each of paprika, cumin, garlic powder, mild chilli powder and ground coriander

  6. 1 pinch Sea salt and black pepper

  7. 4 Slices of wholemeal bread

  8. 40 g Mature light cheddar

  9. 4 tbsp Salsa

  10. Guacamole, salsa, sour cream and tortilla chips for serving (optional).

Instructions

Heat a little oil in a pan and add the peppers, onion, courgette and mushrooms and gently cook for 5 minutes until softened.

Add the all the spices and salt and pepper, mix well and cook for a further 2 minutes.

Toast the bread and then spread two slices with salsa. Divide the vegetables between the two salsa slices and then top with the cheese.

Put until the grill for 3 minutes until the cheese has melted, put the other slice of toast on top and serve.
