Everyone loves a good burger – but this is Mexican Burger a GREAT burger! All of your favourite Mexican flavours in a healthy burger.
I finished week 3 of the couch 2 5k program today and I can officially run for 3 minutes without any problems. Well, I still get out of breath – but I’m running, that is to be expected. I am both looking forward to and dreading starting week 4. It’s a 5 minute run. Week 4 is where I had to give up last time because of knee problems, and my knee is starting to hurt again. I am taking it easy and not doing any squats or lunges, as they make my knee worse. I can’t believe I will be able to run for 5 minutes at the end of next week.
I had breakfast outside this morning, before I went to the gym, and read a bit more about what foods go well with what. Turns out, chocolate also goes with almost everything. Chocolate and bacon though. Hmmm, I’m not convinced.
Today’s salad was a Niçoise salad. It was mixed greens, cucumber, tomato, olives, roasted new potatoes, tuna, green beans, spring onions/scallions, basil and an egg. The dressing was olive oil, red wine vinegar, garlic and black pepper and topped with more basil and cress.
I shall be enjoying some home made lasagne (oh my god – I haven’t had that for so long, I am very much looking forward to it) and a cocktail in the garden tonight. Then tomorrow is BBQ time!!
You have probably guessed by now – I really like burgers. Hey, a national newspaper even published a story about how much I loved them. They were one of the foods that contributed to making me over weight and when I decided that I needed to get healthy and lose weight, I didn’t want to sacrifice the foods I love, and I didn’t. I still don’t. I just eat them less often and make home made, healthier versions of them.
No matter how much you like a certain food, it is easy to get bored with it. But that is one of the great things about burgers (I really don’t need to list all the great things, do I?!) – they are so versatile and you can make so many different types, that you should never get bored.
You also might have noticed, one of my favourite cuisines is Mexican. I love, love, LOVE Mexican food. So, why not combine Mexican food and burgers?! Enter…..the Mexican Burger. Genius, I know.
It could even be done on a BBQ.
How to make this Mexican Burger – serves 2:

2 whole wheat burger buns
250 g lean turkey mince
0.5 egg beaten
1 tsp cumin
1 tsp ground coriander
1 tsp paprika
1 tsp onion power
1 tsp garlic granules
2 tsp chipotle flakes
1 red pepper sliced
4 mushrooms sliced
60 g Mozzarella
2 tbsp Guacamole
2 tbsp Pico de Gallo
In a large bowl, combine the mince, seasoning and egg and form into 2 burgers. Cover and put in the fridge to chill for 30 minutes.
Grill the burgers for 10 minutes, turning occasionally. Grill the peppers and mushrooms at the same time.
Cut the buns open and spread some home made guacamole on the base, top with a burger, peppers and mushrooms, mozzarella and some pico de gallo.
